Interesting. Ive had the opposite experience where Strip has more gristle than ribeye and isnt as tender.

I definitely agree filet lacks flavor though. Its also especially overpriced given that reality.

Some ribeyes have too much stuff between the cap and eye of the steaks and the ends. Strips to me most the time just has the fat on the one side and I'm okay with some chew. And with price not a thing would get a well marbled prime strip is tender enough.

If choosing a choice grade, I would opt for ribeye though because even a choice ribeye has decent fat inside the muscles.
