Huh, didn't know that!

I didn't know Nothing Compares 2 U was a Prince cover for the longest time. I haven't heard it but it's hard to fathom a better rendition than Sinead O'Connor's.

Prince's original isn't great. He did it live a lot and it was more of a duet. Prince would sing the first part, then Rosa Gaines would do the second part. Then they'd come together for the chorus.

Prince has written a lot of songs that you wouldn't know were by him.

Manic Monday by The Bangles is a good one. It wasnt until later that he recorded his own version, which was kinda similar.

Funnily enough, Prince did a cover of One of Us during his super religious phase

after Sineads version got big, it seems like Prince wanted to take the song back and started performing it live and putting it on his greatest hits album. Then ultimately his estate released his original demo version of the song which yes, is the definitive version of the song, but also not a version I think he ever intended to release

Another cover of a Prince song is Cyndi Lauper's version of "When You Were Mine." Since Cyndi didn't change the lyrics, that introduces a gay element to the relationship in the song. Either she's in love with a gay/bi guy who left her for a dude or she was with a woman who left her for a dude.
