Hoenn mons will be a pain in the ass to find. The rest of the dex wouldn't be that difficult. It's always hardest to find mons a generation back because they don't fill up the game with mons you already saw two years ago. Johto mons are rare in Gen 3. Hoenn in Gen 4. So on and so on.

I like the mods that make the stuff they put in the game that you'd never bother with in vanilla important.

Like chopping wood to make gold and build campfires, or mining to find ore to craft your weapons.

Yeah. It's fun if you aren't expecting Stardew exclusively. As a farming sim it's kind of meh/bad, but as a more Rune Factory-esque game where combat plays a bigger role than there is more fun to be had. It also scales with more players better in terms of enjoyment due to what all is going on, though YMMV there.
