I think some bands get burned out and need a break, or maybe life catches up to them and they need time to focus on themselves or family, and maybe there's uncertainty as to how long they need to be away. Rather than say they're "on hiatus" leaving fans in limbo, they say they're hanging it up so there's no expectation they'll return. Maybe it's only one or two key members of the band that want a break, and they feel it's unfair to the rest of the band who can perhaps form a new band or something, instead of keeping them on the hook contractually or whatever.
