It was really good. I used a cast iron to make it.

Brown a pound of chorizo and when it's browned removed it from the skillet with a slotted spoon. Melt half a cup of butter and mix it with the grease that's left over from the chorizo. Add 1/4 cup of flour and whisk til smooth. Then let that cook for 5 mins.

Then you'll whisk in 2 cups of milk on medium and as it simmers it'll thicken. Then you can add more milk depending how thick you want. I ended up with 2.5 cups total 2% milk. Then add salt and pepper to taste. I like lots of pepper in my gravy.

Then you readd the chorizo and I added 7 oz of diced green chilis.

You can make your own biscuits but I just did Pillsbury grands and they came out great.
