Here's how I see it.
The Host lives to entertain the audience, and while he has the power to win every match, he doesn't necessarily do so. And here is Ganon, a character most people want to see win.
But what is more entertaining for the audience? Just seeing their champion automatically win just because they want him to? If I'm interpreting his personality right, it seems more likely that The Host would draw this fight out, keeping the audience in suspense, but ultimately defeating Ganon. With the people's champion defeated, the payoff would be even more satisfying when The Host loses in the future.
