Do you guys suggest playing the same champion over and over so you become really good with that champion, or playing several champions so that you are more diverse but not quite as specialized in one play style?

I suggest STARTING with just one or two champions.

You learn how to play them very well against a variety of champions. You learn how your 1-2 champions work both with and against most of the other champions. And you will learn those other champions in relation to your champion(s) of choice.

And then when the time comes to branch out and expand you will have a pretty good idea about things.

My first main was singed and as a result I seldom have a difficult time against enemy singed. I was already intimately familiar with his match-ups and his weaknesses because they were MY weaknesses when I played singed.

And from singed it got expanded to Nunu, and from Nunu to others and so forth. Intimate knowledge of how a champion plays will always be valuable. Playing any of the mains I've had for any length of time is like riding a bicycle now.
