Watch it anyway. My friends had to really push me to watch Angel since I wasn't a huge fan of his character, but I ended up liking it more than Buffy. You'll know when the spin-off starts. Most people suggest to watch the shows in the order they aired so you get the most out of any cross-overs. I didn't do this, but from other watch-through topics I've seen it looks like people really enjoy it when they do, so try it if you can.
Well, if it's to take advantage of cross overs, I'll have no problem watching them simultaneously. I love me a good cross over and cameo.
