Y'know what other RPG is simple and takes place in a world slightly less removed from reality than Earthbound?
Pokemon Red/Blue/Yellow.
I can see why people like Earthbound, but what you described... isn't Earthbound. Earthbound is involved, you equip each individual party member and manage their health as it slowly crawls down, more often than not at the brink of death unless you do some really fast management. There's a lot more thought put into how you stack your characters and what items you give them as opposed to 'kay, healer and mage in back row, strong guys in front, add my favorite character as a wild card' since your characters are always forced in a set arrangement of turns.
A simple RPG would be something like Dragon Warrior or one of the Final Fantasies before IV where you can just take your time and do whatever. Earthbound is deliberately designed to be more strategic than those RPG's, for better or for worse.
