For example, Indian, Cajun, Spanish, Chinese, Vietnamese, some Scottish food. Spice enhances a lot of flavors, especially fat and protein. It has kind of become a trend now to do scoville torture. Hats off though to people that can tolerate ghost pepper/reaper challenges though. It's funny, because I make my spicy foods actually spicy, whereas the Vietnamese cooks I work with barely put spice in their batches of general tso or mongolian.
