Outside of that, honestly putting a fan on a wing is barely qualified as building something. You can always build more ridiculous contraptions, but I have to question why any of that is necessary if you specifically hated building.

You have a lot of really powerful tools like rewind and ascend. You know you can like lift a metal plate up, put it back down, rewind it, then just ascend up it? That alone saves most building in like at least half of the puzzle shrines I've seen
That rail one you're referring to (if it's the same one I'm thinking of at least) is the only shrine so far I was unable to figure out how to do correctly. I just built a long ramp out of stone slabs, extended it to the final rail, got on it and used Recall, and then slid down the rail with my minecart shield.

I believe I saw a topic on the TOTK board for the hardest shrine, and that one got the most mentions. I looked up the solution afterward and it seemed pretty obvious in hindsight. Just couldn't think of it myself though.
