Is it really even necessary to carry a week of emergency food on those things? It is hard to believe a scenario where a modern cruise ship has to be abandoned and lifeboats aren't recovered within the day, let alone an entire week.

Each of those even come equipped with multiple GPS distress beacons.

I think so.
Imagine if the cruise ship was sailing from New York to the London.
It'll take about a week on average.

If the cruise ship sank in the middle, it could take several days for rescue vessels to reach the boats (and considering the sheer number of passengers on the cruise ship, it's going to take time to organize enough rescue vessels to arrive, too).

Oh, and you'd probably want several gps devices in case one or two fail.
