Okay, I do need a ruling check if anyone has any ideas regarding Yata-Garasu.

Lets say I summon it with Shinobird, which allows it to remain on the field.

-I attack, and the opponent cannot draw a card.
-They summon a monster and attack Yata, but I attach it with a Metalmorph or something which lets it survive and do damage to the attacking monster and destroys it.
-Next turn, I attack with Yata.

Since Yata did damage on both the opponents and my turn, does the opponent ship their next TWO draws? Or is it not stackable?

Yata wouldnt be the one doing damage on the opponents turn. Its just battle damage being reflected due to the failed attack. Its just old card wording too, if it was made today I would assume it would say direct damage is the trigger but I would try it in game to actually see to be sure. The older wordings are certainly tricky.

It also says just skip the draw phase of the next turn. So while it may be stacked the effect only goes off once as the others dont come in to play.
