It is a big deal. There's no reason to raise the price just because a game is out of early access.

I think of it less as raising the price because it's out of early access, and more as lowering the price because it was in Early Access. That's purely a semantic difference, obviously, but conceptually I feel like getting a discount on an incomplete game makes more sense than paying extra for a more complete game (that's literally what DLC is, but DLC's optional). Given how much of a gamble Early Access games can be (there's no shortage of stories of developers never finishing their EA games), discounting them as thanks for having faith in the developers is pretty reasonable.

Also, I quite disagree that there's no reason to raise the price. Coming out of Early Access is often a very arbitrary line, but it's still pretty reasonable to charge more money for more game. If you compare Minecraft Alpha to Minecraft 1.0 (which did Early Access before it was cool), the latter's clearly worth more.

Well, yeah. Literally any pricing or business decision is "because they want to do it like that." That statement is a little on the semantically null side.
