I can't eat melted yellow cheese it makes me sick, but......I have a sneaky way of making mac and cheese that works.

I get a box of kraft mac and cheese. Imake about 2/3rd of the box (somewhere between 1/2 and 2/3rd).

I add a bit of butter after making the pasta, add my spices (garlic and pepper primarily).

Then I add a bunch of grated parmesian cheese. I stir/mix it up well, then I add half of the cheddar cheese from the box, mix it up so it's evenly distributed (it doesn't melt exactly, it just clings to the melted parmesian), then I add the other half of the cheese.

Net effect is warm pasta with a good yummy cheese consistancy, a bit spicey, but with no melted yellow cheese. It's pretty good actually.
