The main power of MG/SG echelons is having an extremely high damage output for a short period of time, which maximizes killing speed and minimizes the time that the tanks are exposed to damage. This can even power through some bosses that otherwise might be problematic. Plus, MG's can use AP rounds to defeat armored enemies/bosses that only appear in night maps. The problem with these teams is that they need to reload for a while after firing that initial burst of damage, so their overall DPS evens out in long battles, but the armor from the shotguns helps them survive if a second salvo is needed. Plus, as you mentioned, MG's consume a lot of resources.

As a beginner, you won't need to worry about building an MG/SG team for a while. At most, you might consider raising LWMMG (who is a 2-star LMG who greatly outperforms her common status due to a useful skill and well-placed base stats) and fielding her in a mixed echelon. With a damage/accuracy buff from a HG, you can make a pretty solid 2AR/1SMG/1HG/1MG echelon that can do well in a lot of different story missions.
