Part of the reason they are cutting hours is restocking takes a lot more effort when shelves are cleared out, typical restocking of a store takes some effort but if people are buying up entire aisles it takes much more time and effort to restock.

The employees are still working a lot just trying to keep those shelves stocked up, I also imagine this is placing further demand on delivery of said items meaning that they are getting more shipments. At my local store last night I was talking about the bread being completely gone and he said they just fully restocked it earlier that day.
