Did it taste like Sausage and eggs?
It's been almost three years since I've had either of them and to me they taste like what I remember. However, I live with an omnivore who also eats what I cook and he said the oat sausage tasted like something you'd get at a school cafeteria that is probably not anywhere near 100% meat, especially noticeable in the texture, but the spices were right and he did enjoy it. He was less enthusiastic about the mung bean egg, which he could only say was like what banana flavored candy is to an actual banana.

What was the texture like

The oat sausage was a missing a certain plumpness that real sausage has but going back to what my housemate said, it was pretty reminiscent of low-budget, filler-laden sausage.

The mung bean eggs were decent but I tried to make a homemade version of Just Egg (which has my omni housemate's stamp of approval) and it was a little too dense and got kind of nuggety after it cooled enough to eat.
