I would say that not even Judeo-Christian mythology gets explored all that much outside of maybe the King Arthur myth (which is debatable at best as to how Judeo-Christian it is). Shinto and Greco-Roman are easily the most explored due to a lot of Japanese developers and plenty of western developers tapping into it. Norse is a bit weird since it usually gets tons of acknowledgements but rarely any actual exploration. Not to say it doesn't exist (it very definitely does) but it's not in the same league as the Greco-Roman stuff.
