^Ah but which region of Carolina?

Because the eastern Carolinas, western Carolinas, and the mid part of South Carolina are all very different.

I'd give a nod to east Carolina. They barbecue the whole hog (as opposed to just the shoulder in the western part of the state). Get some crispy skin pieces and some fattier pieces, adds texture and flavor absent from anything else.
