I gotta go with Texas. That brisket just melts in your damn mouth when done just right.

And another thing, in general the Texas mentality is that if the meat is smoked just right, you don't need sauce. Just some salt and pepper will do.

  1. Texas (by a mile, for the beef ribs, brisket, and sausage)
  2. Kansas City (best sauces in the country)
  3. Carolina (nobody does pork better)

^Ah but which region of Carolina?

Because the eastern Carolinas, western Carolinas, and the mid part of South Carolina are all very different.

I'd give a nod to east Carolina. They barbecue the whole hog (as opposed to just the shoulder in the western part of the state). Get some crispy skin pieces and some fattier pieces, adds texture and flavor absent from anything else.

Agreed. I've only been to East but had some of the best pulled pork there.

Texas>Carolina for me.

My buddy has been smoking meats for about 3 weeks now for his bar. Full combo platter of brisket,chicken,pulled pork,sausage and 2 sides for $12. It took me 2 sit downs to finish and it was the best I've had in years.
