It doesn't seem to offer more armor than their set equivalent. Is it just to look different and to use precious stones for upgrading instead of having to hunt keese and lizalfos all over the world? I think they're just there to fit the 'heroes don't wear helmets' aesthetic, and give you a minimalist alternative to the comparable headgear found in matching suits.
