Those are my three problems with Wind Waker as well, despite my immense enjoyment of it. The game needed to be way harder. Changing the wind direction was something I got over pretty quickly though because I loved the sailing. The fetch quest didn't bother me as much as most people but it's definitely a legitimate complaint.
The lack of difficulty is the only thing that really hurts it imo.
Let me change what I said about sailing. I love sailing. I just don't like it as much as I should because changing wind direction so much is stupid.
