Do you have the Drake sword?
Do you have a decent shield?
Lure them out one at a time into the clearing, circle them, and hit them from behind. Keep up your shield as much as possible, and when they slow you hug their body. Drop your shield after every hit to recover stamina, since their swing is so slow.
They're super easy if you play cautious.
