Because the late game minigames are in no way good and we wouldn't play them if we didn't have to. Remove Chocobo Racing, Lightning Dodging, Cactuar Simon Says, and Butterfly Catching and just put the ultimate weapons in a couple chests, it would make the game better.
Defeats the whole purpose of an "ultimate weapon". They're meant to be an unreasonable grind because they're of a power above what you need to complete the game.
