how many people in ancient times were able to actually change their body to a different gender/sex. It was impossible until recently.

Eunuchs existed a long time ago and modern technology is barely any different from that (genital mutilation and subsequent hormone imbalance causing physical changes).

Human evolution is no longer biological, we are still evolving in social evolution and technological evolution.

Social and technological evolution is accumulation of knowledge and is not exclusively human, we are just the driving force for that "evolution".

The body no longer has to change because we change it ourselves.

The body changes, not the species. We don't call people with artificial limbs androids, it's a little more involved than that.
