The problem with this is you're pretty much limited to only ever doing unskilled labour, and I'm just not at all interested in going to stock shelves at the local Walmart if I don't need to.

No company is going to hire an engineer/accountant/hr manager/whatever that only wants to work 2 days a week. Doubly so if your track record is only working at a place for 6 months and then moving on. Unskilled positions will take you because they're used to high turnover rates, but skilled positions take a long time to fill often, and it's very expensive to do so, so companies usually want to believe you'll stick around for a while.
