Cover with cheese (including the portions without the mashed potatoes. Mozzerella works best for this, but you can do any kind of cheese. Toast it till the cheese melts (and melts into the bread in the square. combine both slices together. The cheese keeps the mashed potatoes in so they do squish out when you bite into it. The cheese is also slightly crunchy adding a good texture to the sandwich. The mashed potatoes add a ton of flavor and spice (depending on how you make them).
