Your best option might be to get a budget Android phone that's capable of being rooted + another ROM being flashed, and just making the installation as minimal as possible. If you're open to iOS, maybe wait until the next SE model comes out (since it'll literally just be an iPhone 15/16 but with a downgraded camera) and go with a minimal amount of apps from there.

KaiOS didn't take off because their products are mostly marketed towards the elderly. The only worthwhile minimalist phones are sold at a premium while often times being recycled versions of older phones from other manufacturers.
