In my case, it's less about the actual distinguishing the two terms, and more about how I feel that calling it a "sequel" is an excuse for the remake trilogy's infidelity toward the source material. There are good changes, ones that make sense or add something, but from the point with Dyne and onward, the changes shift into unnecessary or bad. Like you, and some others I've talked to, said about Dyne, it's like the developers actually missed the point from the original game; no amount of being a "sequel" really validates the change.

Also, you brought up the Gi. I thought the concept of fleshing them out was sort of neat, but by the time you're halfway through their sequence, they're beating you over the head with what's to come, and I'm left feeling sour over this filler. Like that time and resource could have been put towards something else. Then again, the time and resource spent on Not-Charlie-Sheen-from-Platoon and Zach, the underground facility in Nibelheim, the Whispers and Sephiroth doing their crap at the Gongaga reactor, and half of the Ancient Temple could have gone towards Cid's hometown and his plane being shot down, ALONG WITH HIS DREAMS AS IS HIS THEME IN THE OG AS A CHARACTER, rather than the engines going out because lol Vincent is too much weight. Instead we got the sanitized Cid rather than the salty, vulgar man with a broken dream. It's like the developers didn't know when to stop adding things until they got to Cid, and realized they needed to streamline the rest of the OG's first disc, by which I mean cut corners as all companies do when they use the word "streamline."

Yeah, the handling of Dyne was where Rebirth went downhill for me. The ending of Rebirth made me stop caring about the next installment, no matter how fun part of it may be. And seeing someone be like "lol it's a sequel, not a remake," just rubs me wrong.
