It's a combination of caffeine (which stimulates your bowels) and mentally knowing "now is the time I usually go". Also of course if your body is used to going at that time it will naturally be ready to.

I'm an evening pooper. I go every day at roughly 5:30pm, after I get home from work and take my pre-workout (which has 200mg of caffeine, or about 2 cups of coffee). I don't feel I have to go at all until I get home, and then all of a sudden my tummy's bubblin'.
