I think Baccano is an incredible looking anime aesthetically, but it's not exactly a technical powerhouse. Mushishi has absolutely gorgeous art but it's animation is nothing special. Ping Pong has incredible animation but I don't like how it looks at all. Last Exile had an incredible integration of CG so many years ago for a truly unique look. Eureka Seven has my favorite character designs....
