Really, the last few years have been weird, economically speaking. Just looking at inflation, $300 for a Switch in 2017 would be equivalent to almost $400 today, whereas $300 in 2013 (when the PS4 came out) would have been equivalent to ~$335 when the PS5 came out in 2020. Covid and crypto mining also made a mess of the electronics market in ways that it's still recovering from, which I would expect meant they couldn't take advantage of the kind of reductions in manufacturing costs that they'd be used to.

Though the more salient point is probably that people expect there to be weird economic factors, and that lets companies get away with keeping prices steadier/higher than usual.
