they clearly don't care, especially since people like myself will blindly buy them anyways

Well, they're the only Toys to Life product that is retaining high popularity because they didn't make one game for all of the toys and instead made them work with many games. So I'll say no.

technically all amiibo are compatible with Mini Mario & Friends Amiibo Challenge, though only a handful do unique things

I doubt it. They don't "need" to when they know people will buy tons of them just to collect.

Same with Fire Emblem Echoes.
You can use any Amiibo for Illusionary Heroes- the Smash FE ones will give you that character, Alm and Celica give you a copy of your Alm and Celica, and everything else gives you a generic Class unit scaled to certain levels based on the Act.
You can summon Peg Knights with wooly Yoshi and this is cool.

Most Amiibos (or at least the early ones, I don't know how many more they patched in) unlock 8-bit versions of the characters in Super Mario Maker.
