The gameplay is 99.99% the same in both versions. And if they really want to catch all the pokemon, there is much easier ways of getting pokemon you don't have without dropping an extra $40 and playing 30 hours again >_>

In the earlier days before online trading, I can understand why some people who weren't as social in real life would find it a lot easier to just buy both games to catch them all. But ever since they added online trading in the 4th gen games, that's pretty pointless now. Other people sometimes buy both versions so they can do multiple playthroughs (including challenge runs such as solos or Nuzlockes) without needing to erase their main save file that has all their stuff. Even so, now Pokebank kind of offsets that too...
