I already have Splatoon 2 and Mario Kart 8 Deluxe, planning on getting Rabbids Kingdom Battle because SRPGs are the best.

Is the Bomberman game any good? Kind of want to get it because we go over to my fiance's nephew and nieces' house a lot and they're all gamers.(all of them are in their low 20's)
Not interested in Odyssey because I don't really like 3D platformers, and not interested in Breath because of its transition to open world. (open world games consist too much "gameplay" of pressing up, as this video demonstrates:

Odyssey and BotW are great, your loss. And I had a feeling it would be that video. You realize that Maddox is an idiot/contrarian dipshit, right? I wouldn't put much stock into anything he says.

I think you pretty much covered everything. There are other good games, but they're multiplatform. I guess ARMS is a somewhat big exclusive, but I don't know if people really care about that.

I agree with the video though. The only one I disagree with is Fallout, because they actually have stuff happening and stuff to explore while you're pressing up, and there's incentive to fight the encounters.

Arms is really good. And Nintendo has been supporting it consistently since launch, adding new fighters and tweaking the gameplay and doing nerfs/buffs where needed.

I wouldn't really say there are many must haves right now. Get the ones that you have and only get a new one when something you need comes out. Or once you finish those.

Also, that video was kinda dumb...

There's stuff all over BotW. It's been frequently praised for how so much of the world map has purpose. The most up-pressing you do is when you're climbing, but I think climbing is pretty fun and cool. You can climb basically anything and it's a huge shortcut in some areas if you do it right. And once you've climbed something tall, you can just glide off towards an interesting destination.

OMG, that video was fucking amazing!

I've always hated these large, empty sand boxes, and the massive praise they get perplexes and somewhat angers me. That guy fucking nailed it! Loved all the shit he said about OoT, what an overrated piece of crap game, and one that started a lot of this trend.

I will say while it's a huge problem in BotW, and in general that game seems to revel in wasting the player's time, someone at Nintendo has some fucking sense at least, by including like 125 warp locations through the world. I actually didn't even use a horse until 75% through the game, and only for the sake of completionist urges to get all the unique horses (but I was never going to 100% the game, stupid korok seeds).

They're bringing Bayonetta games to Switch, so those are must-own.
The Xenoblade series has big open worlds, but actually fills them with creatures, hostile and not (though you can fight anything you want), and stuff to explore, and is also fairly generous with warping points. Haven't played Xenoblade 2 yet, but if Xenoblade X got ported from Wii U, that's a good game. I mean, there is walking, but it's not as tedious as BotW....
Hyrule Warriors is less acclaimed than the prior games but I think it's really good if you like hack and slash. It's getting a new version on Switch.
