Spent last weekend cleaning up a coworker's mess.
Spent this weekend cleaning up a coworker's mess.
Apparently my job is to be the office *****.

I also have seniority over these people btw.

No one will stand up for you if you don't stand up for yourself.

I'm in a supervisor role at my job and used to keep my work phone on me at all times to answer questions from other drivers. My employer and manager don't recognize the extra work I put in because they're unaware of it, and I'm not the type of person to herald my own actions, so all this behavior goes unnoticed and unrewarded.

Made the decision to shelve my work phone during my off-duty hours and while there's been some drop-off in productivity it's nothing catastrophic and we just play catch-up when I'm back on duty.

If you're not on-call or otherwise contractually obligated to perform work duties during your off hours, ignore your job. Enjoy your time off. Those messes your coworkers made can wait, or your employer can pay you to be a hero. Make them recognize the value you bring to them. Because if you're willing to fix these mistakes for free, they're going to keep exploiting you until you decide to stand up for yourself.

I think the biggest thing out of all of this is that my coworkers do not seem to care if they have continued employment at this company, compared to me, who really, really cares about not losing their job.

All the better reason for not bailing them out when they fuck up, it would seem. Let them dig their own grave and focus on your own work.

If you're their senior, document their errors, and if/how you assist them in any way in correcting their errors. Save emails and screenshot conversations. Stay professional. There's a fine line between covering your own ass and being an office snitch. Don't go running to management every time your coworkers makes a mistake, but be prepared for if/when management comes to you to ask how these messes keep happening and what your role in these messes was. Make them understand that you may be senior to them, and you're more than willing to help advise when needed, but you can't be responsible for their workload and still be expected to be responsible for your own.

ChatGPT can write methods and code snippets.

The day it writes an entire program is the day me and OP are out of a career.

You should basically always be looking at other jobs though, at least know what you're worth.

All of this. As a supervisor, your responsibility is to make sure that they are able to get the necessary work done. That can and should extend to helping them from time to time and guiding them as needed, but it should not involve cleaning up after them on a regular basis. If they chronically fail to get their work done, you need to sit down with them and figure out why. If it's that they need certain additional resources to get it done, you can help secure those. If it's that they just aren't good at the job or aren't willing to put in the necessary effort, maybe it's time to replace them with somebody that is.

You need to actually solve the problems, not just treat the symptoms every time they come up. Nothing's going to get better unless you do.

Demand get fired?

If you're putting an extra 20 hours/week of unpaid overtime and routinely working unpaid days to hold the place together, firing you would be a catastrophic mistake and there's a good chance they'd come begging with a better offer within a week. Beyond that, though, there's a good chance you could line up a better job before asking for a raise, in which case it really doesn't matter if they fire you.

Oh buddy, I work a lot more than 20 hours a week overtime these days.
there's a good chance you could line up a better job before asking for a raise
There is no chance I ever line up a job that has job security like this one. Could I get something that might be a scam and might last a year? Yes. Sorry, that's not how things work with me. I work for a place until I get fired which is something I learned from people I respect.
