I know the basics like you need to eat, drink, sleep, ammo has a weight, can't heal broken limbs easily etc etc but I want to know if it makes the game much much harder or just hard enough to keep it interesting.

The latter. It's sometimes annoying having to keep an eye on your weight, but it does add an extra level of roleplaying, having to actually sift through stuff you find, rather than just mashing the button and picking up every bent can and empty syringe you find.
Also, totally play on hard when you do hardcore. I did from the very start the first time I played NV and it's fantastic.

What does higher difficulties change in this game? I hope it's not simple a '' you take more damage and your enemies less '' thing.

Hard is pretty much do less damage/take more damage, but it's not unreasonable. I think stuff heals you less too, but it's been a while since I've played and, to be honest, I've not played 3 or NV on anything other than hard so I can't really compare.

Weight on ammo pretty much just means you have to limit yourself to certain weapons which use certain ammo. Which makes it much more challenging that just carrying an arsenal of weapons and having millions of rounds of ammo for each of them. I just focused on melee and hand-to-hand stuff to make up for ammo and now I'm one-punching everything.

I personally just use 3 weapons (I just started to they're bad weapons) -> Varmint Rifle with scope and bigger magazine. 9mm pistol with bigger magazine and .357 Magnum. Everything else I sell.

Also any idea of some place I can use for storage? In Fallout 3 I used the megaton house (obviously) but I have no idea if there are easy to get houses in NV.

you can get your own room in novac, but that might be a bit away from where you are. you can use victor's shack as a home base if you want, it's considered unowned in game.

Ah good, Victor's dead in my game anyway.. found his corpse lying around near Goodpsrings, probably died when I ran back to town with 3 gian radscorpions on my tail at level 2
