I think they're being sold separately as downloads from PSN/XBLA.

Might be wrong though.

Not yet. They're all going to be released individually on PSN / XBLA some time this year.

This is what you're asking.

You're able to download, individually, any game from a PS3 HD Collection on PSN, so long as the collection wasn't released recently. Once the physical stock is exhausted, they're put up on PSN.

except that god of war origins collection. i think that was pretty close to day and date digital
