depends on what you're looking for really buy if the criteria is 'what do people like' I'd break it into categories like this

Definitively (huge consensus with most who have seen, not just a passing fad, etc.): Legend of Galactic Heroes, Gintama, Fullmetal Alchemist: Brotherhood (arguable but I doubt opinion on it will change with time), One Piece, the original Gundam trilogy and the Zeta Gundam series, Kara no Kyoukai

Other Popular Mentions (generally well-liked but still hated by some, old enough to not be a fad but not old enough to really be a classic): Code Geass and Death Note(by some), Haruhi (blech), Tengen Toppa Gurren Lagann (just don't take it seriously), Baccano!

recent stuff that has gotten buzz (pretty much only people who have been watching anime for 3 years or less will go around calling these the best ever): Mahou Shoujo Madoka Magica, steins;Gate, Fate/Zero, Persona 4 (don't think any of these are true best of all time contenders)

if you're looking to branch out into genres other than what's popular or widely considered good there's also a lot of great stuff out there, you just have to know what type of material you are into. just like with any other medium there's also a ton of terrible **** you have to sift through if you don't know what you're doing.

cool, thanks. I think I'll start with your definitive category and see what I like, then go from there. might start with the Gundam stuff, Wing had some ups and downs but overall I enjoyed it. if there's definitely better Gundam stuff out there I think there's a good chance I'll appreciate it.

films are cool too. I remember reading some magazine back when I was 14 or so and it had a list of "top 50 animes of all time" or something like that. I recall specifically that it had Akira at #1 and I've been interested in seeing it at some point but never got around to it.

I think Gundam Wing is actually pretty great but I don't think it's the best Gundam series and most who have seen a good deal from the franchise would be inclined to agree.

another great Gundam series is 08th MS Team which you could probably watch after you watch the original trilogy but before you start Zeta. the good thing about Gundam that makes it both very intricate but also very accessible is that the more Gundam you've seen the more stuff/connections you can find between a lot of the series (especially all the UC stuff) but the individual series are for the most part self contained enough that you could just watch one of them and enjoy it without needing to be a Gundam expert.

any of those 3 are just amazing.

I also really like Rurouni Kenshin, but I doubt it as well liked as the others.

I don't think One Piece goes in that first category at all. Series has a lot of haters (including myself).

Yeah One Piece is not anything special, and the Gundam series isn't top anything, just a cool mecha series. Saveus has a lot of good picks there but it's not a consensus, just completely subjective.

I'd say if you're new to anime, stay away from stuff like that and watch Fullmetal Alchemist or Death Note. Both top tier starter anime.

For movies, some of the big and influential ones are

Akira
Ghost in the Shell(The Matrix was based on this)
Studio Ghibli films(Disney/Pixar movies are based on these)
Paprika(Inception was based on this)
The Girl Who Leapt Through Time(Pretty sure this was ripped off too)

Except I'm not because if I was doing that I would've shot down Gundam too. But I've never really noticed a disproportionate amount of Gundam haters.

but none of those are very good. Not that I'm saying P4 is very good either, but at least its better.

Ghost in the Shell (the two seasons) is awesome. I think you'd dig it - futuristic police thriller set in a world on the brink of becoming a dystopia; it occasionally offers some philosophical insight on the mind of the repressed, the synthesis of humanity and machine, and other such ideas. Good dub too, for the most part.

one piece definitely gets mentioned over bleach and death note for this kind of question. O_o
one piece doesn't carry nearly as many haters in terms of those who've seen it, it does however carry many people who are completely dwarfed by the sheer size of the series. it's a 600 episode series and running without an end in sight yet. asking anyone to do that is a pain in the ass. it has some 'haters' as a result of that + people being offput by the initially weaker animation.

but there's no denial that if you're looking for 'greatest anime of all time' it should be mentioned over many, many other series because it's effectively the shounen genre in its entirety with animation that's improved over the years quite a bit. the flaws in one piece generally are flaws that you'll find in most others in the genre.
