It has to do with a lot-- the number of concurrent players, outdated graphics, trite gameplay mechanics, and a game that has already been experienced.

Assassin's Creed III, I decided to spend time going through all of the Assassin's Creed games I can get my hands on. almost 5 months in and I just got to 3...

I can tell this is the point when Assassin's Creed started getting bad, even with Revelations I still had a lot of motivation to play through everything. This is kind of a slog, plus it feels like they took out a lot of stuff that made the previous games great in favor of hunting and privateer missions. I mean seriously, how do you go from the 20+ assassination side missions each with different requirements to "Kill these 5 Templar" and consider that an improvement? But at least I can pilot a ship!!! What assassin doesn't dream of being a pirate?

GTA V - as I nearly always am and I'm trying again for like the 8th literal time to play through I wish cloud saving actually worked for this game, like it does Fallout 4. I kept having issues that cost me my save file since the game was released and having to start over. I had a backup to my most in depth save on my external. So I lost my main save, but I had my backup... then my external died and lost it as well.

No Mans Sky - Dabbling it, peaceful romp and there has been several updates I'm checking out.

How are outdated graphics silly? Many games look like garbage nowadays, though admittedly some still look nice (e.g. Diablo 2)

The gameplay mechanics tend to be generally less refined, not as well done, or just overplayed in older games. Unless you're experiencing it for the first time, it's just not fun to play, unless you have low expectations (which seems to be the case for many neckbeards).

Because graphics whoring has never not been silly. Provided you can tell what's going on, graphical quality is a meaningless novelty that stops having any value past the first few minutes. It's art direction that will result in awe-inspiring views after that, and that's largely independent of graphical fidelity.

Not really. Early 3D games tend to suffer in the camera control department, simply because nobody knew what they were doing, but that's really the only offender consistent enough to generalize.

I've finished Persona 5 and have been playing Persona 4 Arena Ultimax.
I'm almost finished with the story episodes.

I kind of want to replay Persona 3 or 4 though...
Or maybe one more playthrough of Persona 5...

Some of us appreciate pretty things. I don't need a game to be drop dead gorgeous to be fun, but I still very much appreciate beautiful worlds in games. Art direction probably is more important to achieve this than graphical fidelity, yes, but there's a limit, for example, to how much you can achieve with a pixel art game vs a game made with by well-funded team in a modern 3D engine.

What do you mean? I spent all of Andromeda marveling over how pretty the environments were and on the same token how fucking butt ugly the character models/textures/animations were. It had a real impact on my game experience throughout pretty much the entire game. Hell, the shit character graphics actually made me less attached to the characters because of how robotic/uncanny valley it made them all seem.

That Xenoblade visually wowed me on a very regular basis, and it did so with butt-ugly graphics. As one example, at least. It's impossible not to notice that its graphics are pretty bad, but that stopped bothering me pretty quickly after I started playing, just as I stop appreciating 4k textures pretty quickly. What I do keep appreciating in games - regardless of graphical quality - is good art direction. The environments you marveled at in Andromeda were marvelous because they were well-designed, not because they had lots of pixels. The character models that bothered you bothered you not because they lacked pixels, but because they were poorly designed.

The more power a system and engine has to spare, the more artistic flexibility you have in designing stuff, especially in the realms of draw distance and object counts. Calling art direction and graphical fidelity "independent" is an exaggeration. However, the balance is very heavily in art direction's favour when it comes to what makes games look good.
