Asked this one worker to find out if they had any copies of gtav in stock and the guy just turns on his scanner then stares at it for 2 seconds and says "no we don't have any in stock" and proceeds to go to the break room.

The scanner should have all the needed inventory information, if it said they had nothing, then as far as the worker can tell, they have nothing.

Maybe their inventory is accurate enough and you just don't trust it's true.
If they get 50 and the thingy says there are 0, it means that 50 went through the register and were removed from the system. Why would they receive more than 50 but only enter "50" when they got them? Unless they were really 60, and the receiving employee made a mistake and eneterd "50".

Now, the reverse could be true: the system could indicate that there is still 3 units, but there are really none.
How? 3 were stolen.

Are you guys cucks? I said the employee just turned on his scanner and stared at it for a few seconds and told me they didn't have any in stock. He didn't scan the barcode on the label or typed shit in.

Can you go to Target's webpage and find that store, and see if it's there? If something appears as "in stock", it should say the same for their scanners.

Of course I was watching his scanner. It's like a small red scanner. He literally just pressed the button so it turned on and he ddint scan neither did any beep occur.

Those aren't scanners exclusively, they can search by name too.

Best Buy has them and they don't need to scan anything to look up an item.
