the biggest change I think as far as you're concerned is the fighting gameplay. Kiwami has 4 different fighting styles you can change to on the fly mid-fight which mixes up battles and makes them fun. The original only had one fighting style and you're pretty much just doing the same combos over and over again

the main things that are the same is the original cutscenes and story are all there and faithfully recreated in the new engine

everything else is pretty much new additions on top of the base game

Edit: Whoops I read the question totally backwards. This is all saying why playing the PS2 one for newcomers is better IMO so hopefully it's still useful?

Biggest thing I'd say you miss by playing Kiwami over the original (aside from the hilariously awful dub, which is a neutral point at best) is the experience of playing the series from the beginning and seeing the gameplay and world evolve with each title.

If you want to start with Kiwami, you'd be better off starting with 0, since the additions to Kiwami are written to follow 0 as a sequel. You'd have the problem of playing the best game first, but even playing Kiwami first would make the first 5 titles feel dated anyway.
