Because the foam is the CO2 releasing and if you don't release it prior to drinking it, it just fizzes up in your tummy and makes you feel full faster.

But I've always heard the opposite, which is why peeps pour the beer down the side of the glass to reduce the foam.

Which is true?

And that's why beer isn't poured right. People don't want to sit there for 10 minutes before they can drink it. They wanna drink it as soon as it's placed in front of them.

Your buddy is right. Its more how your stomach reacts to other things you eat when you consume so much CO2. Releasing it on pour is better.

I always figured most of the aroma is in the head, so you want enough to make it fragrant but not so much that it's annoying to drink.

Basically, around an inch of head.

The cleaner the glass, the less foam. I pour immediately onto the side but then move the glass so I'm pouring into the center.

Foam is created through vigorous action, either through the liquid travelling across a rough surface or through it dropping from a height before hitting the surface. The cheat method is a wet glass won't produce foam.

Basically if you wanted the most foam-free glass then clean it, leave the inside slightly wet and pour the beer onto the side of the glass from the lowest possible height.

I don't know what video you're talking about but I doubt it. He's like 40 and a total hippie and only uses free wifi at coffee shops and stuff. I don't think he'd know how to edit a vid or upload it lol.

The CO2 in your stomach tends to escape via a process known as "belching"

eta: and if the idea is to get rid of CO2 in the beer, why do they put it in the keg carbonated anyway? Seems like they could decarbonate it if that's the way you were supposed to drink it
