I just watched them all again last week. I'd say number 1 had the most solid adventure feel to it. The other two were great but slightly messier I think.

The start was the best part of Fellowship. I love the shire scenes, and the prologue is a masterpiece.

It was good but each movie is easily better than the last.

For me it's because it captured the feel of the books the best. The following two movies were grand fantasy action films, sure, but they had very little to do with the LotR books.

Fellowship by far, not only cuz it was my first experience seeing something so grand scale in theaters but it had the best final boss with an epic final fight and the film had a serious tone throughout. This is before they made gimli a cornball clown for the sake of comedy gags

Borimir was a beast too, not to mention other then Legolas for a few shots here and there the action is kept realistic like and gritty and it feels like legit tension when engaging in style whereas in the 3rd they just seem to be mowing through the army effortlessly and pulling off video game stunts

Which is essentially what is implied in the books - Aragorn and the sons of Elrond were described pretty much as untouchable on Pelennor's fields, and Legolas is so light on his feet that he can run on top of snow. For all the flak they get, I don't think Legolas's ridiculous stunts in the movies are far off the mark, it's just that they're not really the focus of the books.
