So what's the deal with the US version of Yakuza 3 they removed all the Cabaret stuff or something

They removed all the stuff they thought Western audiences wouldn't understand.

So I believe in addition to the Hostess mini game, they also removed shogi and mahjong and stuff like that.

I took it upon myself to learn mahjong because of Yakuza 2

Shogi nope the pieces all look too similar I ended up using a computer program to simulate shogi similar to how there are ones for chess

Yakuza 4 brings everything back and goes multicast and was the best Yakuza game up to that point.

Y5 was just Y4 but with more cities but a weaker story. Y4 and Y5 really went all in on the minigames.

the number of girls you can ask for goes down in later games.

They develop their story arcs a good deal more and I guess it got expensive to hire all these porn stars for the roles.

Y5 was just Y4 but with more cities but a weaker story.

Kiryu's Y5 story is pretty god tier, it's just a shame it's the first one.

Saejima's is super weak for sure. Haruka/Akiyama's are good but they're way out there and I'd understand folks not liking them. Shinada's is awesome but again, a very different type of story than the series usually tells.

Y0 is one of the best video games ever made, full stop.
