Why didn't one of the eagles just wear the Ring to fly into Mordor completely unseen? I mean, why didn't Frodo just do that? It's not like there's any consequence to wearing it.

Because the eagles consider themselves above the trifles of men.

The nazgul can see the ring bearer when he wears it. The witch king stabs Frodo with the Morgul blade on amun sul. The nazgul actually have terrible vision in the day time. They see better at night and can see the shadow realm.
