First time "brewing" anything. This was a budget recipe made with things I already had around the house, a test run for making cider or wine, and maybe beer. I just want to make sure my sanitation is on point and not risk wasting good ingredients on it. I re-hydrated a 12oz bag of prunes no one is ever going to eat and a 4.5oz bag of dried, sweetened bag of pineapple that my mom bought thinking it was a "healthy" food. Both were loaded with fermentable sugars, making them prime candidates for fermentation. After they were pliable, I pureed them and added them to a one gallon jug of water along with half a cup of cane sugar. I let that sit for about 12 hours, long enough to let the sugars dissolve into the water so I could get a hydrometer reading. My reading was almost on the 1.070 mark, which would give me 9.2% alcohol if fully fermented according to the calculator I used. There was likely more sugar in the fruit that didn't get read since it wasn't in the solution, so it's probably a bit higher than that. It took six days to fully ferment and a week to carbonate. I was supposed to give it two weeks to carbonate but the bottle was more than firm and I couldn't wait. It tastes surprisingly good, more than it honestly has any right to be. It's very tart with faint notes of plum and pineapple but otherwise not a lot of flavor, which is a good thing tbh. I was expecting to get something putrid and gritty but it came out pretty clear on its own. It is at least 9.2% so there is a bit of alcohol burn that probably would've settled were I more patient, but it's still really drinkable. Overall, very pleased with this. This was just a test but I could see tweaking this recipe into something not so low class. I'm also very hyped to start making good stuff. --- ... Copied to Clipboard!
