Sunflower or canola. I get super ill if I have generic "vegetable oil" or anything soy-related.

Avocado oil is the best general use oil out there for cooking. It has a delicious taste and, as far as I know, has the highest smoke point of any of the cooking oils. It is perfect.

For taste animal oil is usually superior.

But convenience, price and health wise vegetable oil is superior.

I use butter because it makes things taste better than vegetable oil.

If you want healthy food you're not going to get it when I cook. I make good food.

Canola to support local economy, though I will switch to olive when I relocate.

I also prefer the cultured, slightly fermented European style butter to the products in the West.

Basically. Olive oil or butter when their flavours are suitable, canola when I want a more neutral flavour and/or a higher smoke point. Sometimes bacon fat when it's feasible and the flavour fits, but I don't keep any around, so that's only ever when I've just made bacon.
