Make sure you take it out of the fridge at least 30m prior to cook time to bring it to room temp (longer for steaks over an inch thick), and pat the meat surface dry with paper towels. This allows a more even crust on your sear.

Either ribeye or new york strip, the grocery store I go to seems to have them on sale fairly regularly so I'll just get them whenever they're available.

It's the best way IMO.

Butter up a skillet
Heat butter to very hot
Rub salt and pepper on both sides of steak
Sear steak in skillet, 3-5 minutes on each side
Put in oven for 5 minutes or so

Perfection <3

I also add a little bit of garlic powder.

I actually made the best filet mignons yesterday. Fucking melt in your mouth deliciousness. I was pretty proud.

Some tips: season it and let stand at room temp for about 30-60 min. Also baste the steaks as it cooks using a spoon, topping it with all the butter/juices. I also go by touch when cooking it, so I know its at medium rare. It should feel like it feels when you press the palm of your hand, under your thumb.

Yup I only do it on a skillet.

I also prepare a pan sauce after using shallots, garlic, white wine, Dijon mustard and butter.

You can get a sweet sear on a skillet. I also like being able to baste the steak. It makes it very moist and buttery. I cannot stand chewy steak.

Treat yourselves to hanger steak if your grocer/butcher sells it. It's known as arranchera in Mexican cuisine. It's a cut that's full of flavor and far cheaper than filet mignon or tenderloin.

It helps cook the juices into the steak better. Not just the spices but the delicious BLOOD (jk we all know it's not blood). It's an amazing finishing touch and makes the flavor richer. Professional steak houses do it for nearly every cut of steak.

I also prefer to do my steaks in a cast iron. ribeye most of the time
I put the burner on high and let the skillet heat up while I prepare whatever side i'm doing. then when it's nice and hot, put a little canola oil and some butter. throw the steaks in there and turn the heat down to medium. then just put more butter in there and constantly baste the steaks with butter for a couple minutes each side.
comes out perfectly medium rare and it's never failed to impress despite how stupid easy it is. although, I don't let people know how much butter is in there
